10 Minute Spooky Snack

You know what we don’t have enough of?  Time!  I swear we’re constantly in a rush.  Whether it’s getting the kids to or from school, rushing to finish homework, quickly brushing our teeth before bed, it’s always go-go-go.  So when I found an idea for a quick and easy dinner, I knew I had to try it!  Great.  Except I wanted to try it on Halloween.  Which was a Monday.  Which meant gymnastics night.  Which meant we had approximately 20 minutes from entering our house until we had to leave our house for practice.  Hmmm. Enter the 10 Minute Spooky Snack!

Or in our case, Halloween Dinner!

These quesadillas were so easy to make and the girls loved them.

First step, preheat the oven to 375.

Then lay out tortillas on a baking sheet.  Scoop some shredded Mexican cheese blend on each one.  Add chicken as desired (the kids wanted just cheese, but I prefer a little meat in mine).

Next comes the fun part!  Before placing another tortilla on top, I cut in a cute jack-o-lantern face!  I cut them 4 at a time.  Simply stacked them and cut.  One design meant it was a cheese only quesadilla, the other design meant it had chicken on it!

Popped them into the oven for 7 minutes and out came a deliciously spooky meal!  Perfect for our on the go family on Halloween night!

Ingredients (to make 8):

16 Flour Tortillas

2 cups Shredded Mexican Cheese

1 small container of Canned Chicken

Additional toppings (optional):

Sour Cream

Salsa

Guacamole

The 4 Parks 1 Day Challenge | Walt Disney World

Have you ever been to Walt Disney World? If so, you should know that there are four theme parks.  Magic Kingdom, Animal Kingdom, Hollywood Studios, and Epcot.  Most people buy a theme park ticket which allows them to access one park per day.  Then there are folks who purchase Park Hopper Tickets.  That gives them the freedom to visit more than one park in a day.  Typically they’ll visit a park in the morning and a park at night.  But us, we’re taking things to the extreme.  We’re going to attempt a 4 Parks 1 Day Challenge!  You read that right, we’re going to visit all four theme parks in one day!

That’s silly, right?  You’ll be rushed and won’t enjoy it.  You’ll waste so much time on transportation.  That’s just plain dumb.  Yup.  And I’m so excited!  It’s a challenge and as a seasoned Walt Disney World Expert and Authorized Disney Travel Planner, I’m always looking for something fun and exciting to try.

So here’s the plan.  It’ll be my family (daughter’s 7 and 3) and my parents.  That’s right. Not only are we crazy enough to try and accomplish all four theme parks in one day, but we’re dragging around a toddler!  Our goal is to visit at least 3 major attractions at each theme park, take a picture in front of the iconic symbol of the park, and try to meet Mickey Mouse at every park.  Whew. I’m exhausted just thinking about it!

We’ll start at Hollywood Studios.  The attractions we’re hoping to visit here are Toy Story Midway Mania, Rock ‘n’ Roller Coaster, and Tower of Terror.  The park opens at 9am and our goal is to leave by 11.  Then it’s time to take the boat to Epcot!  Here we have FastPass+ reservations for Test Track and Soarin’ (both are tier 1 FastPass+ reservations, however with the toddler in tow we cannot all ride at once, so we’ve split the FastPass+ reservations and will use Rider Swap), Journey into Imagination, and the Character Spot.  The goal is to leave by 2:30pm.  Next up is Animal Kingdom.  We will hopefully have secured a 4th FastPass+ using our My Disney Experience App.  We will the Safari, Adventurer’s Outpost, Everest, and one other attraction before leaving by hopefully 6:30pm.  Our last and final stop is Magic Kingdom!  Here we will see the Main Street Electrical Parade, Wishes Fireworks, ride as many rides as we can and call it a night!  The park is open until 1am, but with rope drop the next morning, our goal is to call it quits earlier than that.

Free HelloFresh Box | Our First Box

Everywhere I look on Pinterest I see these awesome “30 minute meals.”  They all look so beautiful and delicious, but I’m intimidated.  You see, I don’t cook.  Barely at all.  Perhaps you don’t believe me?  I just learned how to brown meat about a year ago.  Not kidding.  It’s that bad.  My daughter is just about to turn seven and she’s been showing more and more interest in cooking and baking.  Obviously, this presents a problem since if you tell me to mince garlic I will look at you like you’re a unicorn.  Then a friend of mine asked if I wanted to try a HelloFresh box.  I had heard of these food delivery places but they scared me.  They SAY they are easy and 30 minute meals.  They say they deliver everything you need.  They say they provide instructions.  Sure.  They all say that, but again, I don’t know how to cook. So would it really be okay?  Well, when offered a free box from my friend, I couldn’t turn it down.

The process is pretty easy.  You sign up online at their website.  After you sign up you are able to log into your account to schedule your first delivery!  I picked four, 2 person meals.  Then I was able to select what meals I’d receive.  I was given 6 options.  I was also able to pause the delivery of next week’s box, as we’ll be out of town so the food would go to waste.  It was extremely easy to do.

Today was delivery day!

Sadly, the box arrived very damaged and it was a 90 degree day.  It made me nervous for the contents.

Each instruction is carefully written out. I had to explain the processes to my daughter, but she was able to complete all of the steps by herself.

In the end, our meal said that it was a skill level of 1 (super easy) and since a seven year old made our meal, I’d say that’s pretty accurate.  It said that it would take 10 minutes of prep and 30 minutes of cook time.  That was a little under for us.  It took us exactly an hour from unboxing until eating.  I would say that a normal adult who has some cooking experience would be faster, however a seven year old was pretty slow with cutting her vegetables and I was pretty slow in trying to find if we owned a zester!

Our meal was good.  It wasn’t great, by any means.  But our daughter was super proud of herself and we cleaned our plates.  We have three more meals to try before I’ll put out a final verdict on the FreshBox, but so far it was worth the… oh yeah, I got it for free so it didn’t cost any money!  Ha!  So far it was worth the 3 minutes it took to sign up 🙂
